My husband was craving for this soup the other day so I had to make it. We didn’t have all the ingredients in my pantry so we drove to the Filipino store to get them. I think we ate our dinner late at that time because I cooked so late but it was worth waiting for. We love it, unfortunately I didn’t eat a lot because I’m not allowed to. I have gestational diabetes and all my meals and snacks are measured so my blood sugar level won’t go up high but my husband had to fill his bowl twice because he can’t get enough of the taste lol. That’s one of his favorite food you know.

 
 

I love fruits & desserts

I’ve never seen Plum trees in person yet but I’ve tasted the plum fruit already and it was delicious. My husband just loves plum fruits and he always grabs 3 whenever we go to the grocery stores. He takes with him at work for his snacks. I want to try and make Plum desserts one of these days, I’m sure my husband would love it. I just have to ask my friend if she has a good recipe for plum desserts. The picture above looks so mouth watering. Am I right?

Eating healthy!

Weight is really an issue here in our house. My husband and I trying to lose weight as much as we can but sometimes it’s hard to resist to not to eat those tempting foods that we can see on TV commercials. I’ve been doing my exercise for over a month now and I’m getting used to it already. Whenever I don’t feel like doing it I have to push myself and mind to do and so far it works. I don’t miss a day yet. Now when it comes to cooking, we thought about healthy grilling would be a better way to cook the meat instead of frying them. Most of the time we baked the meat and seafood but we wanted to try something else to satisfy our taste buds. That’s why we grill our foods.

Happy meal!

Imagine my dinner is happy meal. Ggrree! How can I loose some weight? I haven’t had any idea on what to eat for dinner and my husband is going to the pharmacy to pick some prescription when he asked me what do I want to get something for myself? I said “Happy meals” (McDonald). Not a good diet huh? Don’t imitate me because this is really not healthy food. The husband just came home and placed the food right in-front of my computer desk while writing this post. Looking at him makes me sick. Oh my goodness. Sometimes I hate myself “self pity” for not making the right decisions even in just a simple way. When some body asked me something and want an answer instantly, I really can’t decide right there.

Mom loved my pancit!

Yesterday we drop off some food to mom. I’m so happy that she loved my pancit. It was her first time to eat it because last time when I brought some to my sister-in-law she wasn’t there and I guess she was sick at that time. Anyways last night my husband told me that mom emailed him and she wants to thank us for driving that far just to drop off the food. My husband just left the food on her front door because she can’t see us for she has a contagious illnesses and she don’t want to pass it to us. Here’s her email…

Hi honey, just finished eating the whole tray of whatever that was that you brought me. I put the lumpia in the freezer and will have a few of them for dinner. I don’t know what she put in it or how she made it, but would love to learn. It was fantastic!! I couldn’t get it in my mouth fast enough.. lol Very delicious. Thanks so much for coming all this way to drop off the food. I really appreciated it. Sorry that you couldn’t visit for awhile. I really miss you guys, especially my precious angel Ethan. Thanks again for the food, it was awesome and I already know I love your lumpia.

Goodie night

Every first Thursday of the month we always have goodie night in our book study. Last Thursday Senta called us to remind us about it just in case we forget, but i was so tired at that time that i didn’t have time to cook pancit (Asian noodles). We ended up buying some donuts for our share in our goodie nights. It’s good thing that we had our dinner at home because when we got to our book study i saw everyone brought appetizers instead of heavy meals. We had fun though, we had all kinds of sweets that night and of course i took some home with me. Forget the diet for once!

Pizza for dinner!

Hubby just woke up from his cat nap and now his hungry, i didn’t make anything because we have left over food but seems like he didn’t want to eat them. He decided to just callPizza for dinner. Oh well i guess, I’m not that hungry so i don’t care if i don’t eat rice tonight. Ethan had his dinner already so I’m OK with pizza. Honestly back home pizza is for snacks only but when i got here in the states i was surprised that they can eat pizza as their meal or main course for the day. How do you like pizza?

hhhmmm i don’t know what i want to eat or serve for dinner tonight. We have chicken adobo leftover I’m not sure though if that’s what I’m going to eat for dinner because i had that for my lunch too. I haven’t cook anything yet but i have thawed the meat out already. Oh my, i don’t know this recent weeks i don’t feel like cooking, i cant think of any new recipe to cook from. Gggrrrr i wish my parents are here so i don’t have to worry about cooking or something like that :(

Cebuano Pancit Tanghon

1/4 cup oil
1clove minced garlic
1 onion (sliced )
1 chicken breast, cooked and flaked

1 carrot (julienned)
1/2 head cabbage ( shredded )
4 cups chicken stock
1/4 kilo sotanghon (soak sotanghon in water to soften)
3 stalks green onions (chopped)

Heat oil in a wok then sauté garlic, onion, chicken & shrimps. Season to taste. Add in vegetables and stock. Bring to a boil then add sotanghon. Cook until noodles and vegetables are cooked and stock has dried up. Serve topped with chopped green onions. 100 grams shrimps, shelled
patis and pepper to taste
